Blondies by Erika.

Here is a yummy recipe for you courtesy of Erika from Southern Girl's Kitchen.
I love.love.love Blondies.  
That sounds really funny when you say it out loud.
But.
It is true.
They are pretty awesome.  

Here is Erika's recipe...

Brown Butter Blondies 

2 cups bread flour
2 ½ cup light brown sugar
2 tsp. baking powder
½ tsp. salt
1 stick & 2 tablespoons of unsalted butter
3 large eggs

Preheat oven  to 350
Combine flour, sugar, baking powder, and salt in a large bowl.
Using a small skillet, cook the butter over medium heat for about 6 minutes or until lightly browned, stirring occasionally. Be sure to keep an eye on this.. you want the butter slightly brown not burned..
Pour browned butter into a small bowl to cool for about 10 minutes.
Combine butter and eggs stirring with a whisk until combined. Pour butter/egg mixture over flour mixture: stir until moistened.
The batter will be very thick, somewhat cookie dough-like (this is ok.. I promise) 

Spoon batter into a 9x13 baking pan  lined with parchment paper, smooth the top with a spatula.
Bake at 350 for 30 minutes or until a wooden toothpick inserted in the center comes out clean (better known as the tooth pick test) Cool in pan and cut into squares.

  2. Oh My!!! Never heard of Blondies, but they look real good so.....(this is all your fault Smith!!!!LOL) I am going to upset our nutritionalist and bake some of these!!! i think they will taste devine, maybe John will have some custard on them, yum! but i would probably have a couple of slices with a big (vat) ahem..i mean't 'mug' of coffee!! they look a little like brownies, is that the general type of thing they are Krista honey!? and even if you burn some i bet the kiddies will still love 'em, lol xxxxx speak soon my friend
    P.S can anyone tell me what bread flour is? we have plain flour or self raising, not sure what bread flour would be? does it contain yeast already or baking powder? thanks girls x

Thanks also for the link up Krista it looks a great blog so i am following Erika now, her recipes look so yummy, and because of my disabilities i haven't been able to cook for over 3 years, and miss it so much cause my cooking & baking was something i loved to do and was good at, but recently we bought pine barstools so that i can sit at the kitchen counter next to the stove so that i can prepare food and cook, with John....am looking forward to making these to start my 'rebirth' into the culinary world, if i make anything from Erika's blog i will be sure to take pics and credit her with the recipe and put a link to it on my blog too, us bloggers have to stick together!!!
